Dieser kräftige Amarone wird Liebhaber großer, kräftiger Rotweine dank seines opulenten Geschmacksprofils und seiner gut gebauten Struktur begeistern. Das Bouquet öffnet sich mit Anklängen an leuchtend rote Kirschen, Cassis und dunkle Pflaumen, ergänzt durch Trockenfrüchte, Tabak und Zigarrenkiste aus der Eichenlagerung. Am Gaumen zeigen sich tiefe, konzentrierte Aromen von dunklen Früchten wie Bitterschokolade, Kaffee und Mokka, zusammen mit einem vollen Körper, einer geschmeidigen Textur und festen Tanninen.
Nach der Lese der Corvina, Corvinone und Rondinella werden die Trauben auf traditionelle Weise 90 bis 110 Tage lang getrocknet, um den Zucker und die Aromen zu konzentrieren. Die Trauben werden anschließend vinifiziert und zwölf Monate lang in Barriques und anschließend weitere zwölf Monate in 3000 Liter Fässern gereift. Die gut gebaute Struktur macht diesen Wein zu einem idealen Anwärter für eine ausgedehnte Kellerlagerung über die nächste Dekade, er kann aber auch jetzt zu herzhaften Gerichten aus rotem Fleisch wie Beef Bourguignon oder einem Rib Eye Steak genossen werden.
Die Familie Cottini ist seit Generationen als Winzer tätig, und so war es selbstverständlich, dass Paolo Cottini sein eigenes Weingut in der kleinen mittelalterlichen Stadt Castelrotto im Herzen der Region Valpolicella gründete. Seine Weinberge befinden sich im Negrar-Tal und in Valgatara auf einer Höhe von 250 bis 580 Metern.
